People often ask us, why would a restaurant featuring organic and natural ingredients sourced from local farms and an expertly selected All-American wine list call itself a “tap room?”
We like good surprises.
Think “tap room” – you might imagine a worn dark pub. So surprise #1: cool compelling design.
Cool compelling design – you might suspect this translates to an unaffordable menu. Surprise #2: reasonable prices.
Reasonable prices – achieved through scrimping on quality of product? Surprise #3: sourcing best-in-class ingredients (including from local farms and not off a distributor’s truck) prepared simply to capture their fresh fabulous flavor.
We buy organic or naturally-raised products. We draw seasonally from the local farms of the rich countryside of Virginia, Maryland and Pennsylvania – including Tuscarora Organic Growers, Old Meadow Farm, Help From Above Farm, Hares Valley Growers, Jubilee Organic Farm, New Morning Farm, Shoestring Acres, Lil’ Pond Farm and Next Step Farms.
Our produce is free of pesticides and other chemicals. Our beef is naturally-raised and hormone-free. Our chicken is free-range (and naturally-raised hormone-free). Our organic eggs and hand-churned butter come from Trickling Springs Creamery in Pennsylvania.
Good surprises are fun.
